We only have a little Irish background in our house, but I’m all about creating and celebrating new traditions! I have never made a Corned Beef Brisket in my life and probably ate it all of two times. I was anxious to ruin a new and potentially amazing tradition, so I asked some corned beef “expert’ advice and was told that crock pots are a definite “yes” in the corned beef world. So, here’s what I tried: it was easy and a success! Enjoy!
St Patty’s Day Crock Pot Corned Beef
Serving Size 6-8 people
Ingredients

Cups hot water
2 Tbsp Apple Cider Vinegar
2
Tbsp Sugar
½ Tsp Pepper
1
large Onion, quartered

Lbs Corned Beef Brisket
1 Corned Beef Seasoning Packet (allspice, coriander, mustard seed, pepper, cinnamon, cloves, ginger, dill seed & others)

Small White or Yellow Potatoes, quartered

Cabbage, cored cut into 8-10 wedges
4-5 Carrots cut in 1 inch wide slice
Directions
1 Combine water, vinegar, sugar, pepper and onions, in a 6 quart slow cooker and mix.
2 Place corned beef and seasoning packet in the mixture.
3 Add potatoes and carrots over the top and sides.
4 Cover and cook on high heat setting 4 hours.
5 Remove the lid and scatter the cabbage wedges over the top.
6 Cover and continue cooking on low 3-4 hours, or until beef is tender.
7 Carve the corned beef against the grain. Serve with cabbage and potatoes, spoon cooking juices on top of the corned beef for added moisture.
